Coffee Bun

It smells amazing, especially when freshly baked!

Ingredients:

DOUGH

  • 8 cups GLOBE FIRST CLASS | HARD FLOUR or HAPPY GRAINS BREAD FLOUR
  • 1 tbsp. iodized salt
  • 2 tsp. instant yeast
  • 1 cup refined sugar
  • ¼ cup skimmed milk powder
  • ¾ cup shortening
  • 2 cups water
  • 1 tsp. bread improver

COFFEE TOPPING

  • 1 cup GLOBE FIRST CLASS | HARD FLOUR or HAPPY GRAINS BREAD FLOUR
  • 1 1/8 cups powdered sugar
  • 1 stick butter
  • 2 pcs. large whole eggs
  • 2 tsp. GREAT TASTE PREMIUM COFFEE
  • ½ tsp. coffee essence oil

Procedure:

COFFEE TOPPING

  1. In a mixing bowl, sift in powdered sugar, ground coffee and GLOBE FIRST CLASS | HARD FLOUR or HAPPY GRAINS BREAD FLOUR.

  2. Make a well in the center of the dry ingredients and add-in butter. Mix until evenly combined.

  3. Add eggs, one at a time, mix well. Add-in the coffee essence oil and mix until completely smooth.

  4. Place the prepared topping into a piping bag. Chill before use.

DOUGH

  1. In a bowl, combine GLOBE FIRST CLASS | HARD FLOUR or HAPPY GRAINS BREAD FLOUR, yeast, skimmed milk and bread improver. Mix until well incorporated.

  2. In a separate bowl, combine iodized salt, sugar and water. Mix until completely dissolved.

  3. In a mixer bowl, add the flour mixture and gradually pour in the wet ingredients while mixing at low speed until the flour mixture is completely hydrated. Add in the shortening and mix well.

  4. Continue mixing at medium speed until dough becomes smooth and elastic.

  5. Cut into 60-gram portions and shape into balls.

  6. Proof for 1 hour and 30 minutes or until it doubles in size.

  7. Pipe the coffee topping over each bun making sure that there are no blank space. Cover up to ¾ of each bun.

  8. Bake in an oven (preheated at 175°C) for 12 to 15 minutes or until desired color is achieved.
