Ingredients:

250g Sampaguita Soft Flour

40g Butter Milk

5g Baking Powder

1g Baking Soda

180g White Sugar

2g Salt

60g Whole Egg

80g Vegetable Oil

20g Melted Margarine

150g Water

0.30g Yellow Food Color

2g Vanilla

 

Procedure:

  1. In a bowl, sift the flour, baking soda, baking powder, butter milk and salt.
  2. In another mixing bowl, combine eggs, vegetable oil vanilla extract and white sugar and mix well.
  3. Add dry ingredients and mix until dry ingredients hydrated and mix well until all ingredients are incorporated.                             
  4. Grease the muffin pans with shortening or baking spray.                             
  5. Rest the batter for 20 minutes
  6. Transfer the mixture into the greased muffin pans using an ice cream scoop 40grams or spoon until half-full.              
  7. Bake for 15 minutes or until brown.
  8. Brush with melted butter and sprinkle with sugar (If desired)
  9. Remove from muffin pans and cool on wire rocks.
