Quatro Leches Cake

The best part is decorating with whipped cream!

Ingredients:

  • 1 cup sifted CONTINENTAL ALL-PURPOSE FLOUR (180g) with 1/2 cup sifter DAISY CAKE FLOUR
  • 8 eggs – separated while cold
  • 1/2 cup (100g) Sugar for the egg yolks
  • 1/2 cup (120ml) Fresh or full cream milk
  • 1 tsp. Vanilla
  • 1 tsp. Baking powder
  • 1 tsp. Salt
  • 1 cup sugar for the egg whites (200g)
  • 1 tsp. Cream of tartar
  • 1 tbsp. Rum

Procedure:

  1. Preheat oven to 350° f or 175°c. Line a 9 or 10 inch x 3 inch springform pan with parchment paper.

  2. For the milk syrup : combine in a small saucepan and cook over very low fire until just simmering: 2 tbsp. Each of condensed milk, evaporated milk, fresh milk and all-purpose cream. Lastly, add 1 tbsp. Rum. Cool well.

  3. For the icing : beat 1 cup whipping cream on high speed until thick. Set aside 1/3 of the whipped cream and place in a piping bag with star tip. Spread remaining cream on top and side of cake. Pipe rosettes of cream on top of cake.

  4. Garnish with white chocolate candies.

  5. Procedure for the cake:
    a. Beat in a bowl with whisk attachment, egg yolks and the half cup sugar at high speed of electric mixer until pale. Turn mixer to low speed and add vanilla, milk, baking powder, salt. Mix well. Lastly, add sifted CONTINENTAL ALL-PURPOSE FLOUR (180g) with 1/2 cup sifter DAISY CAKE FLOUR. Mix until blended.

    b. In a separate clean bowl with whisk attachment, put the egg whites, cream of tartar, sugar and beat together 3 minutes at high speed until stiff, if using a powerful commercial type of mixer. If using a hand mixer, beat the egg whites and cream of tartar at high speed until frothy or fine bubbles appear. Add the sugar, a tablespoon at a time. Beat well after each addition. Beat 4 to 5 minutes more or until stiff.

    c. Pour yolks into whites and fold in with rubber scraper or wire whisk until blended. Pour on pan and bake 55 minutes to 1 hour and 5 minutes or until center of cake springs back when tested with the back of a spoon. Cool 15 minutes then loosen out sides of cake with a metal spatula. Remove from pan. Put on cake plate.

    d. When cake is cold, spoon milk mixture over cake until fully absorbed, decorate cake with whipped cream and white chocolate candies.
