Cheesy Tuna Empanada

A Cheesy Tuna Twist to the Classic Empanada

Ingredients for Dough 1

150g Sampaguita Soft Flour 

50g Water

50g Vegetable Oil

20g Sugar

1g Salt

0.50g Food Color, Egg Yellow

Ingredients for Dough 2

75g Sampaguita Soft Flour

58g Shortening

0.50g Food Color, Egg Yellow

Ingredients for Egg Wash

60g Whole Egg

10g Water

Ingredients for Toppings

120g Potatoes, boild, diced

70g Onions, red, minced

90g Tomatoes, minced 

60g Green Peas, canned

170g Tuna Flakes, drained 

2g Salt

1g Pepper

40g Bread Crumbs 

140g Cheddar Cheese, diced

20g Vegetable Oil (for sauteeing)

Procedure for Dough:

  1. In a mixer, combine ingredients of dough 1. Mix until the dough gluten is almost fully developed. Set aside in a covered container. 
  2. In a separate bowl, combine ingredients of dough 2. Mix by hand until completely combined, form into a bowl and set aside.  
  3. Using a roling pin, slightly flatten dough 1. Then, place dough 2 on the middle of the flattened dough 1. 
  4. Seal dough 1 with dough 2 inside like a dumpling.
  5. With the 'seal side' down, flatten the combined dough into a rectangle. This is done by flattening the dough with the rolling pin evenly at a horizontal and vertical direction. Be careful to minimize slits and holes while flattening the dough.
  6. After flattening the dough, roll it into a long log. Form a spiral out of the log and slightly brush with oil. Allow the dough to rest while covered with a cling film. 

Procedure for Filling:

  1. Wash and peel potato. In a sauce pan with boiling water, boil the potato until slightly tender.
  2. Cut the boiled potato in small dices. Set aside.
  3. Prepare other ingredients. Mince the red onion and tomatoes. Also, drain the green peas and tuna flakes.
  4. In a sauce pan, heat vegetable oil. Saute onion until caramelized before adding the tomatoes.  
  5. Once tomatoes are cooked, add green peas and boiled potatoes. Cook until green peas are tender. 
  6. Then, add drained tuna flakes and mix well in the sauteed mixture. Season with salt and pepper and continue to cook for at least 5 minutes while continuously mixing. 
  7. Remove from pan, add bread crumbs to achieve firm/thick consistency. This is to prevent the filling from seeping out of the crust when baked. 
  8. Add the diced cheese and mix thoroughly.
