Ube Cream Cheese Streusel Topped Bars

Whip up a large batch and share with your officemates!

Ingredients:

CRUST

  • 1 1⁄2 cups sifted MY ROSE SOFT FLOUR
  • 1 cup quick cooking oatmeal
  • 1⁄2 cup brown sugar
  • 1⁄4 cup granulated (white) sugar
  • 3⁄4 cup softened butter
  • 3⁄4 cup chopped nuts

UBE CREAM CHEESE FILLING

  • 1⁄4 cup CONTINENTAL ALL PURPOSE FLOUR
  • 1 (225g) softened cream cheese
  • 1⁄4 cup confectioners/powdered sugar
  • 1 tsp bottled ube flavor
  • 1⁄2 tsp powdered ube food color
  • 1 egg

Procedure:

  1. Pre-heat oven to 350°F or 175°C. Put wax paper on 7” x 11” x 2” pan or use 8” x 8” x 2”
    pan.

  2. For the crust:
    a. Put the MY ROSE SOFT FLOUR, oatmeal, brown and granulated sugar in a
    bowl.

    b. Toss in butter until crumbly then add nuts.

    c. Set aside 1 1⁄4 cups for the topping.

    d. Press remaining crust on pan.

  3. For the ube cream cheese filling:
    a. Beat all the ingredients in a bowl.

    b. Pour over crust. Sprinkle reserved crumb mixture.

    c. Bake for 25 to 30 minutes then cool.

    d. Cut into 20 bars and put on muffin papers
